Cooking Pulled Pork or Brisket for July 4?

Start With When You Want to Eat

Hey Reader

If you’re cooking for a crowd on Saturday, your question may be less “What should I cook?” and more “When on earth do I need to start?”

Pork butt (or shoulder) is one of the more forgiving meats to cook, but it still helps to work backward from the time you want to eat. The Pulled Pork Calculator can help you figure out how much pork to buy and when to get started.

And because I would always rather have pork done a little early than have hungry people standing around the smoker, Make Pulled Pork Ahead walks through getting it cooked before Saturday and serving it without drying it out.

Cooking brisket instead? The Brisket Calculator starts with your serving time and helps you build in room for the cook and, just as important, a proper rest.

No calculator can prevent a stubborn stall, of course. But a reasonable plan and a little cushion make the day much less stressful.

Good luck with your cook, and enjoy the holiday. By the way, if you find any of these tools helpful, please share them with your friends...on social or wherever.

Cheers,

Jim
