Buying Ribs or Wings for July 4?

Before You Buy

Hey Reader

For a lot of folks, July 3 is when July 4 plans start to become real. You have a rough head count, you know whether ribs or wings are on the menu, and now you need to decide how much to buy.

Cooking beef or pork ribs? The Rib Calculator helps you turn your guest count, rib type, and meal style into a realistic number of racks to buy.Buying ribs for a crowd helps you convert your estimate into actual racks at the store. And if your ribs get done before everyone arrives, Keep Ribs Warm can help you hold them without drying them out.

Making wings instead/also? The Wing Calculator turns your guest count into pieces, pounds, and bag counts. Cook Wings for a Crowd may also help you think through the batches before things get busy. Keep wings hot and crispy will help you do just that, while Wing sauce and dip amounts will help keep you (and your wings) covered.

Nothing has to be exact, of course. But I would rather have a reasonable plan before I get to the meat case than try to do the math while someone is waiting behind me.

Good luck with the shopping, and enjoy the weekend.

Cheers,

Jim

Start With When You Want to Eat Hey Reader If you’re cooking for a crowd on Saturday, your question may be less “What should I cook?” and more “When on earth do I need to start?” Pork butt (or shoulder) is one of the more forgiving meats to cook, but it still helps to work backward from the time you want to eat. The Pulled Pork Calculator can help you figure out how much pork to buy and when to get...

Sure, if you're new to the list (or even if you've been around a while), you might not fully realize it, but the emails you get each Wednesday — which others of you have probably cycled out of by now — belong to a prewritten "Welcome Series" that runs for a full year. I wrote that on and off between 2017 and 2024, I...
